"הבשלה" מוגדרת כשלב הסופי בהתפתחות הפרי לפני קטיפתו.<\/p>\n

אולם הגדרת "ההבשלה" שונה לגבי כל פרי וירק . ההבשלה גם תלויה בחלק של הצמח הנאכל והנצרך. המדדים הקובעים את מצב ההבשלה ואיכות הפרי הינם: גיל כרונולוגי של התוצרת; גודל; צורה; מבנה הקליפה; צבע; מוצקות; תכולת מוצקים מסיסים (אחוז הסוכר); תכולת שמן, חומרי ארומה, וכמות המינרלים והויטמינים. מדדי ההבשלה נקבעים בהתאם לארץ המוצא, לאזור הגידול ולזן. אולם כל מדינה קובעת לעצמה את מדדי האיכות של התוצרת הקטופה שהיא מייבאת.<\/p>\n

גם הגורמים החיצוניים משפיעים על מדדי ההבשלה והאיכות והם כוללים את הרקע הגנטי של הפרי או הירק, תנאי הסביבה (טמפרטורה, קרינה, לחות, מים, דישון וכו') ששררו במשך הגידול, שיטות הגידול והקטיף וצורת הטיפול בתוצרת הקטופה, תנאי אחסנת התוצרת הטרייה, הובלתה ושיווקה.<\/p>\n

הערכת האיכות נקבעת בעזרת מכשירים שונים,או על פי שפיטת הצרכן.<\/p>\n
